Winemaking
:

 

The grapes were harvested in peak physiological condition and after destalking and a gentle crush received a three day cold soak. Primary fermentation took seven days to complete before the deeply coloured, almost black wine, was racked into barrel and MLF induced. The wine spent 16 months in 225lit French oak barriques - 33% of which were new. The wine received a soft egg white fining prior to bottling on 18th August 2009.

 

Tasting Notes:

 

The 2008 Paul Wallace 'Black Dog' Malbec displays an intriguing nose: a combination of ripe summer mulberries with some tobacco and a surprising hint of delicate fynbos. An explosion of berries follows onto the palate coupled with hints of cake spice and black pepper with a satisfying finish. The Black Dog Malbec displays all the natural elegance we have come to expect from the Elgin region. Enjoy it with steaks, barbequed meat and pasta dishes.
