Winemaking and Tasting Notes:
   
The 2016 Paul Wallace Reflection Chardonnay is our Maiden Vintage. This small production of 4 barrels / 1093 bottles havebeen vinified from a parcel of Chardonnay grapes (Clone CY95) procured from a neighbouring farm. Whilst we have planted 1,5 hectares of our own Chardonnay grapes on Wallovale Vineyards, these will only come into production from the 2019 harvest. In the meantime, we wanted to experiment with our chosen style. The name “Reflection” is derived from the magnificent early morning and evening reflection of our Chardonnay vineyard in the dam at the bottom of the sloping Chardonnay vineyard.

Our Chardonnay was vinified at Eikendal Wine Cellar. The grapes were whole bunch pressed, inoculated with CY3079 from Lallimand and fermented in75% second-fill and 25% 4th fill 225 lit oak barriques. The barrels were rolled after fermentation. The wine underwent 100 % spontaneous MLF. After 9 months in wood, the wine was bottled on7th December 2016.

The Reflection Chardonnay leads with nuances of clementine, tangerine and popcorn on the nose. A soft entry onto a creamy palate follows where citrus fruits, almonds and oatmeal flavours are supported by well-integrated oak tannins and an underlyingminerality.

A rewarding wine that willcompliment most seafood dishes, fresh oysters, poultry or even a heavenly piece of gorgonzola cheese. Best served slightly chilled.
