Winemaking:
The 2009 Malbec is the second vintage made from grapes produced on his own
farm, Wallovale Vineyards. The grapes were harvested in peak physiological
condition and after destalking and a gentle crush received a three day cold
soak. Primary fermentation took seven days to complete before the deeply
coloured, almost black wine, was racked into barrel and MLF induced. The
wine spent 20 months in 225lit French oak barriques - 33% of which were new.
The wine received a soft egg white fining prior to bottling on 16th February
2011.
Tasting Notes:
The 2009 Paul Wallace 'Black Dog' Malbec displays a superb deep inky core
with a bright red garnet rim and an intriguing nose: a combination of blue
berries, black berries and brambles. A full rich entry, a couli of dark
fruits and spice, firm yet silky tannins, an upfront hint of almonds and
hazelnuts with violets on the back palate. The Black Dog Malbec is a truly
memorable wine which displays all the natural elegance we have come to
expect from the Elgin region. Enjoy it with steaks, barbequed meat, hearty
stews and pasta dishes.
